What are blinis and how is the buckwheat pancake used?

Blinis are small, fluffy pancakes traditionally made with buckwheat flour. Thanks to their light texture and mild flavour, blinis perfectly complement the rich, salty taste of caviar and other delicacies, making them a firm favourite at elegant dinners and parties.

Gluten-free blinis

Blinis are a delicious option for anyone who wants to enjoy gluten-free pancakes. Made with gluten-free buckwheat flour, they retain their fluffy and soft texture.

Ingredients you need (6 people)

3 dl of milk

25 g yeast

2 dl buckwheat flour

1 dl crème fraîche

1 tsp salt

2 eggs

Butter for frying

1 tin of smetana

125 g fresh caviar

How to make perfect blinis

  • Heat the milk until it becomes ‘baby bottle warm’.
  • Crumble the yeast into a bowl and pour over the lukewarm milk.
  • Add the wheat flour, buckwheat flour, crème fraîche and salt. Mix well.
  • Break the eggs and stir the yolks into the batter. Whisk until the batter is smooth.
  • Cover the bowl and leave the batter to rise at room temperature for about 1 hour.
  • Whisk the egg whites until stiff and gently fold them into the batter.
  • Fry small blinis in butter until golden brown – make them smaller than regular pancakes for an elegant serving.
  • Whisk the batter until it becomes fluffy and light.
  • Top each blini with a dollop of whipped smetana, a generous portion of fresh caviar and decorate with dill.
